Hi 😊 here's my list of things to visit and see in Mdina.

A historic house, some of which is at least from the 1300s. Hosted famous figures in Malta's history, but also very well curated. Full of lovely, interesting, and historic items collected by the previous eccentric nobleman.
Another historic home which has been recently renovated and opened up to the public. Not as in-depth as Palazzo Falson, but a very worthwhile visit. A great way to see how the nobles lived inside. It can be done relatively quickly: an hour or less - especially if you don't spend too much time in the basement.
I prefer this catacomb complex as there's a guided tour. The guided tour is around 20 minutes, and makes the experience much more understandable and pleasant.
Has catacombs, WW2 shelters, and an extensive museum. Most importantly has the Cave of St Paul. An important Christian pilgrimage spot. When the Popes visit Malta this is a must-see.

Has catacombs with Jewish Menorahs which are super rare.
A little tip: before you descend into the catacomb, look at the sign near the entrance and see if there's anything interesting. If you decide to enter the catacomb, take a photo of the sign and use that as a map to find the interesting items.
